Looking for a healthy, fulling and delicious side dish for your next meal?  How about some roasted sweet potatoes?

You’ll need:

-3 or 4 big sweet potatoes
-2tbsp of olive oil
-1tsp of honey (I really like using some locally harvested raw honey)
-kosher salt and pepper to taste

1. Preheat your oven to 400 degrees

2. Peel the potatoes then chop them into bite sized pieces of about equal size (to ensure even cooking)

3. Toss the pieces in a large bowl with the olive oil. Liberally add salt and pepper to taste

4. Drizzle the honey over top

5. Toss the mixture with your hands until all the pieces are evenly coated

6. Spread out on a baking sheet. Take care to use a big enough sheet to ensure they aren’t crowded together. If they are, they won’t roast, they’ll steam (which won’t taste very good). I used two baking sheets because I had so much.

7. Toss the pan into the oven and let the potatoes roast for about 20 minutes or so. Take them out, flip the pieces over and continue roasting for another 10-15 or until the potatoes are tender.

The outside of the potatoes should be nice and carmelized while the insides will be moist and soft. Add more salt and pepper as needed and enjoy.

I always make extras of these because they’re cheap,  pretty easy to make and they make good leftovers (I like to use to make sweet potato fritatas the next day or just eat them cold for breakfast. They’re that good!)
